Barbecue Seasoning
Baked Mandarin Chicken
The baked breading on the outside keeps the chicken moist and juicy on the inside. Drizzling and sweet and tangy Mandarin sauce over the chicken in it's last moments of baking creates a wonderful flavor when you bite into the chicken.
1/4 cup sesame seed, toasted
3 tablespoons dry bread crumbs
2 teaspoons onion powder
1/4 teaspoon black pepper
2 tablespoons margarine
1 tablespoon Soy Sauce
4 boneless, skinless chicken breast halves
1/3 cup Rocky Mountain Mandarin Sauce
  1. Combine sesame seed, bread crumbs, onion powder and pepper in shallow pan or plate.
  2. Melt margarine in small skillet; remove from heat and stir in soy sauce. Coat both sides of chicken, 1 piece at a time, with margarine mixture, then with sesame seed mixture. Arrange chicken, side by side, on large rack on foil-lined baking pan.
  3. Bake in 375F. oven for 20 minutes.
  4. Drizzle Mandarin Sauce lightly over chicken and return to oven for 5 -10 minutes longer depending on thickness of chicken and until no longer pink in the center.
  5. Serve with Rice and stir-fry veggies and extra sauce on the side.
